Cucumber and celery are two of the all-time best veggies for juices! In this recipe, they add water and fiber as the base for this rehydrating green juice. You’ll need about one bunch of fresh celery and one medium cucumber. Feel free to use any type of cucumber including English, Persian, or the regular garden variety.

Apple is a natural sweetener for juices. Depending on which you prefer, you can use either a red apple or a green apple in this recipe. You can leave this out if you’re looking to reduce natural sugars.

Ginger and lime bring brightness and spice, giving the juice a unique and flavourful kick. If you have a lemon instead of a lime, don’t worry! It will work just as well.

Recipe Steps:

Wash and prep your ingredients. Give the celery and cucumber a good rinse, then chop them into pieces that will fit in your juicer or blender.

If you’re using a juicer: Feed the celery, cucumber, apple, ginger, and lime through the juicer. Don’t worry if you see a little foam on top – that’s normal!
If you are using a blender: Toss the chopped ingredients, squeeze of lime into the blender, add a bit of water and blend until smooth.

Once you’ve juiced everything, give your juice a quick stir if needed, and pour it into your favorite glass. If you’re using a blender, you’ll need to strain the juice from the fiber after you’ve blended it.

  • Juicer or Blender


  • 1 head celery broken into stalks
  • medium cucumbers washed with the ends cut off
  • 1 whole apple red or green, sliced
  • 1 whole lime skin cut off
  • 1 1/2" knob fresh ginger skin cut off


  • Run the ingredients through a juicer, alternating the hard and soft pieces.
    1 head celery, 1 whole apple, 1 whole lime, 1 1/2" knob fresh ginger
  • Serve and enjoy. ✨


  • To store any leftovers, refrigerate in a tightly sealed glass jar and consume within 3 days.
  • If you wish to make this juice lower in natural sugars, just leave out the apple. 
BLENDER INSTRUCTIONS: To make this juice in a blender, chop the celery, cucumber, and apple into small 1-inch chunks. Add the vegetable and fruit pieces to your blender along with the ginger and lime. Add 1/2 to 1 cup of water according to the consistency desired. Blend on high until smooth. Then, strain the juice through a nut milk bag and serve. 🌱
